About This Beer

Characteristics

“Doto” refers to the Tokachi, Kushiro, Okhotsk, and Nemuro regions of Eastern Hokkaido, each with distinct climates and cultures.
We found a story woven together by the keyword “Doto” within this diversity.
Complexity and simplicity are not contradictory concepts.
We’ve harmonized the fruitiness of Belgian yeast with the herbal notes of European hops and the citrus character of American hops, creating a drinkable beer that feels complex yet unmistakably Knot.
We hope you enjoy it in the Doto region!

Craft Beer Review

Appearance

Clear enough to see through. Beautiful gold. Gorgeous.

Aroma: Distinctive Belgian Notes Combined with IPA-like Hops

Orthonasal Aroma

Beautiful citrus with phenolic and malt sweetness intertwined. Strongly Belgian from the aroma.

Retronasal Flavor

Cool alcohol. Floral phenolics. Beautiful. Along with refreshment, you get an impression of noble Belgian beer reminiscent of Trappist ales. Beautiful. Within that, a slightly peachy, hassaku citrus-like, American fruit impression.

Taste

Mouthfeel

Natural, beer-like mouthfeel.

Body and Texture

Despite the hefty malt impression, there’s a clean, quick refreshment. Not cloying at all. There’s a big gap between the first impression and the actual taste. Gradually building acidity melts together with malt sweetness and alcohol. Everything is beautifully balanced.

The Swallow

Dry and refreshing. Appears to leave nothing behind, but a pleasant ramune soda-like sweetness lingers comfortably. Not clingy at all.

Aftertaste

Refreshing like drinking ramune soda. Beautiful. Pleasant.

Overall Impression

While maintaining the drinkability that’s characteristic of this brewery, the hops and yeast make a satisfying statement. Not too strong and easy to drink, yet the mandarin-like sweetness from the interplay of phenolics, grapefruit-like hop citrus, and malt sweetness was wonderfully pleasant. A Belgian IPA you won’t tire of drinking. That was my review of Brasserie Knot DOTO 6%!

Sediment

Slightly spicy character stands out. Better to pour off separately. That said, the malt character would pair nicely with grilled fish as a wasabi substitute. It maintains balance as a liquid. Tasty dryness.
