On February 11, 2026 (National Foundation Day), I visited Uchu Brewing Toranomon (うちゅうブルーイング 虎ノ門) in Toranomon Hills (虎ノ門ヒルズ), Tokyo! This is the first permanent Tokyo taproom for Uchu Brewing, a craft brewery from Hokuto City (北杜市), Yamanashi Prefecture (山梨県).

I always thought Uchu Brewing was a Yamanashi brewery, but they came to Toranomon Hills! A perfect celebratory visit on the national holiday!
Uchu Brewing’s story goes back to 2009, when its founders started “Uchu Nomin” (Cosmic Farmers), an organic farming unit in Hokuto City, Yamanashi. Originally, it was purely an organic rice and vegetable farm — brewing beer was not part of the plan.
The turning point came in 2016, when a trip to the U.S. West Coast introduced the founders to craft beer culture. That encounter led them to plant hops on their own farm and start contract brewing. In 2017 they built their own brewery almost entirely themselves — DIY, down to the concrete and steel work — and obtained their brewing license in March 2018.
Uchu Brewing’s brewing philosophy centers on the idea of “fermenting” (醸す) — mixing things that would not normally combine and using microbes to turn them into something new. That mission has earned real recognition: “UCHU Relax” won Gold at the 2025 World Beer Cup, and “Uchu Pils” took Bronze in 2026. On Untappd the brewery holds a 4.03/5 rating across more than 100,000 check-ins. On April 9, 2025, Uchu Brewing opened its first permanent Tokyo taproom at Toranomon Hills, extending its reach into the capital.
