What’s Zero Waste? How does it relate to beer?

Zero Waste is about producing as little waste as possible. Kamikatsu was the first town in Japan to adopt this initiative. This brewery carries that philosophy forward with eco-friendly production methods and local ingredient sourcing for sustainable brewing.

Appearance

Golden color (SRM: 2) with the slightly hazy appearance typical of Hazy IPAs. Decent head formation with fine bubbles.

Aroma

Aroma (Orthonasal)

A distinctive refreshing, lightly salty aroma reminiscent of a sports drink. The citrus hop aroma is stronger when carbonation is high or temperature is low, becoming more subdued as it warms. No unpleasant hop smell at all – a well-balanced aroma.

Flavor (Retronasal)

Refreshing citrus flavor dominates without being cloying. The hop impression combines Citra-like ripe melon with traditional citrus hop grassiness. Slight chive and garlic notes are masked by citrus peel impressions. Close to yuzu but with a slight vinegar character – likely the distinctive yukou flavor.

Mouthfeel

Natural mouthfeel with the slightly thick texture typical of NEIPAs. Moderate carbonation – neither too strong nor too weak.

Body and Texture

Pronounced malt sweetness. Hop bitterness isn’t strong on the tongue – grassiness dominates with slight chive and garlic nuances. A pleasant citrus jam-like sweetness wraps everything together for an easy-drinking finish.

The Swallow

Slight dankness, likely from New Zealand hops. A faint menthol-like impression, but a refreshing sports drink-like quality lingers in the throat for a very pleasant drinking experience.

Aftertaste

Despite the slightly thick texture, it’s not cloying, with a refreshing sports drink-like lingering note. Rather than a crisp, dry finish, a soft aftertaste is the hallmark.

Sediment

Yeast and citrus peel flavors remain. Enjoyable right down to the bottom of the glass.
