Founder Adam Paysse’s Philosophy
Essential to understanding Floodland is founder Adam Paysse. Before Floodland, he co-founded Seattle’s popular Holy Mountain Brewing and has played a crucial role in Washington State’s craft beer scene.
He left Holy Mountain in 2017 to launch Floodland and fully pursue his own vision.

Paysse’s particular focus is blended fermentation with mixed-culture yeast and lactic acid bacteria. Nearly every beer touches barrels and ages slowly over time. He primarily uses whole flower hops and actively incorporates fruit, honey, and flowers as adjuncts.

That’s right! Floodland intentionally chose not to have a taproom. Adam Paysse believes beer should “continue aging in the bottle,” deliberately avoiding draft. Through bottle conditioning and slow secondary fermentation, the beer develops a living, evolving complexity!
