On June 7, 2025, a long-awaited new star was born in Seattle’s craft beer scene. Human People Beer Cafe, located on Roosevelt Way NE, is a notable brewery started independently by former Modern Times brewers. From the opening day, it was bustling with local beer enthusiasts, reaching full capacity by around 3 PM.

Speaking of Modern Times, it’s a brewery founded in San Diego in 2013, famous especially for coffee beers and hazy IPAs, hop! Their “Orderville IPA” and “Black House Coffee Stout” received high acclaim nationwide, hop!

That’s right. Human People Beer is a new project started in Seattle by brewers who have the skills and experience cultivated at Modern Times.

Amazing that it’s full from the opening day, woof! Everyone must have been looking forward to it?

Good question, hop! Helles originated in Bavaria, Germany, and is a golden lager characterized by malt sweetness. On the other hand, pilsner originated in Pilsen, Czech Republic, and features the floral aroma and pleasant bitterness of Saaz hops, hop!

Simply put, helles is “gentle and easy to drink,” while pilsner is “refreshing and crisp.” Both are recommended for beginners.

Lovers Helles (4.5% ABV)


It was a very well-balanced helles. The malt aroma was solid with just the right amount of hop presence. I’m happy they used a proper large helles glass. You can drink it smoothly without getting tired. Very refreshing, it quenches your dry throat.
Lovers Helles is a beer that beautifully expresses the characteristics of a traditional German-style helles lager. The perfect balance between moderate malt sweetness and hops made it an ideal session beer.

The tropical fruit aroma was strong, and among them, the impression of refreshing fruity hops was particularly nice. True to Seattle style, the taste had a strong water-like impression, allowing for smooth drinking. Not too heavy, it was a Seattle-style Hazy.

This Double IPA combines hops like Eggers Nelson, Krush, and Citra, hop! The tropical fruit aroma comes from terpenes like myrcene and linalool contained in these hops, hop!

It’s amazing that it’s easy to drink even at 8.4%, woof! The mango-like aroma sounds delicious?
Other Vision, as a Double IPA, features an ease of drinking that doesn’t let you feel its high 8.4% alcohol content. It’s a beer that tells the story of the brewers’ high technical skills.
Producerist (7.5% ABV)


It had a comfortable balance between the San Diego-style strong malt IPA and Seattle’s characteristic slightly hazy, brilliant hops. It was very delicious.
Producerist is a West Coast IPA that wonderfully fuses both San Diego and Seattle styles, befitting former Modern Times brewers. The brilliant hop aroma from DDH (Double Dry Hopping) method was particularly characteristic.

Human People Beer Cafe features a warm, cafe-like atmosphere. Being the opening day, it was at full capacity even at around 3 PM, with many customers unable to find seats. Jazz and Japanese music play inside, creating a comfortable space.
Notably, they’re open from 8 AM and offer breakfast service. The food menu is extensive, featuring sandwiches and salads using local Ben’s Table Bread, and even authentic dishes using Mortadella (Italian sausage).

The staff service was very attentive too! I’ve met and talked with the brewers several times at events, and I was happy they remembered me when I ordered.
