Brewing Philosophy	Brews primarily farmhouse ales using home-grown ingredients and local materials. They grow their own hard-to-source ingredients like rye and beets.

Himitsu Beer is a craft beer brewery in Ise City, Mie Prefecture, founded in 2022. Established by locals Keita Yabuki and Motoki Sasaki, they renovated a barn inherited from their grandparents into a brewery. The name “Himitsu Beer” (Secret Beer) carries the wish that “you share it only with those dear to you.”

They use American malt and Ise water for brewing, offering a diverse range of beers centered around farmhouse ale styles. Main beers include HOMEY SAISON, FULL MOON, SPARKLE, RICE HACK, EUPHORIA, and LUSH.

Himitsu Beer’s craft beers are characterized by unique flavors from local ingredients and meticulous brewing methods, earning high praise from fans nationwide.

Beer Characteristics

A Double IPA overflowing with the gentle warmth and love that defines Himitsu Beer.
At 8.5% ABV it packs a punch, but the smooth drinkability means you’ll likely empty a can before you know it.

We love West Coast IPAs ourselves, and since jumping into this world, we’ve been drinking all kinds.
SEA DRAGON is our own expression of the West Coast IPAs we love so much.

This WIPA features twice the usual amount of barley malt and an equally generous amount of hop flavor.
Orange and lemon aromas with piney, dank American hop flavors. A touch of tropical nuance from New Zealand hops.
Color ranges from yellow to orange.
The juicy mouthfeel where hop flavor and malt sweetness harmonize is endlessly pleasant—enjoyable on its own or paired with food. A gentle, clean bitterness gives the beer definition.
It’s so drinkable you might find yourself passed out after emptying several cans—pace yourself!

Craft Beer Review

Appearance

Slightly hazy but you can see through it. WCIPA clarity. A brownish hue with strong reddish tones. You can sense the malt richness.

Aroma

Aroma (Orthonasal)

Strong NZ-hop character with cold mint-like, menthol-like notes. A crushed frozen peach impression—Galaxy perhaps? Following that comes American-hop chicle gum notes and dragon fruit. The moment you take a sip, as the liquid approaches your nose, you sense a strong grape-like, watermelon-like freshness. Eldorado?

Flavor (Retronasal)

Strong American hop chicle notes with a lemongrass-like quality. Combined with the cooling alcohol, it gives the impression of menthol drops. Coolness and alcohol. There’s also a grape-like hassaku citrus character.

Mouthfeel

Many Himitsu beers have a gentle mouthfeel, possibly from the wheat, but this one has a more stimulating, beer-like mouthfeel.

Body and Texture

The malt is surprisingly light. I expected heaviness from the color, but there’s none of that whiskey-like weight. The aroma is intense, but the palate impression is restrained and almost water-like. For its ABV, it’s remarkably juicy and gentle in the mouth. It has a lightness that makes you want to keep drinking.

The Swallow

Dankness is restrained. Satisfying to gulp down. It slides down the throat like water. You don’t feel the alcohol. While being able to drink without sensing the alcohol is a strength, I think alcohol presence is essential to what we call “dank.” It’s one element that can hinder easy drinkability—and personally, I prefer having it.

Aftertaste

A Strata-like strawberry sweetness lingers long in the mouth. Delicious. When you chase the bitterness deeper, a grapefruit-like impression emerges.

Dregs

A peach-like, fig-like impression lingers—dry yet mellow and sweet. Like fine perfume. The pleasant sensation of biting into and swallowing a whole grapefruit.

Overall Impression

I want to chug this endlessly. A great beer you can drink forever without feeling the alcohol!
