About This Beer

Characteristics

Apricot StoningtonはTrilliumの創業者JCとEstherにとって非常に思い入れの深いビール。
二人が結婚式を挙げたワイナリーで、ブリュワリーを立ち上げようと決意したきっかけにもなったコネチカット州ストニントンの Saltwater Farm Vineyardで採れたぶどうの皮から採取した野生酵母を使い発酵させています。
発酵させた後はフランスのオークシャルドネ樽の中で16ヵ月間熟成させ、さらにその後はステンレスタンクにアプリコットとともに入れ、ゆっくりと二次発酵させています。
色味は薄く濁ったオレンジと黄色、アロマは鮮烈なピーチを思わせる香りに白ブドウ、オーク樽、そしてアーシーなファンク感が現れます。
アプリコットの蜜と黄桃のような味わいにビスケットのようなモルトのバックボーンが感じられ、最後にオーク樽の風味が舌に残ります。
フィニッシュはほんのりと甘みがあり、心地良い酸と軽い飲み口が特徴的です。 (Source: Antenna America)

Beer Review

Appearance

Clear. Apricot skin? Something floating. If you ignore that, it’s surprisingly very clear.

Aroma

Aroma (Orthonasal)

Sweet aroma like frozen crushed grapes, plus apricot. Strong grape character — wild grapes. Also a strong oak-derived nuance. There’s a faint soy sauce or mitarashi (sweet soy glaze) note, but you really have to look for it.

Flavor (Retronasal)

Apricot character and berry acidity. Sweet notes. Natural. Slight honey quality and oak barrel character.

Taste

Mouthfeel

Acidity is slightly forward.

Body and Texture

Acidity builds gradually. Behind the acidity, there are impressions of kiwi and shiso (perilla) from umeboshi (Japanese pickled plum). As the acidity intensifies on the tongue, bitterness emerges simultaneously. Kiwi-like character is strong. The supporting malt sweetness is perfectly balanced.
温度が上がるとほどよい酸味を含んだ甘いぶどう。ホップの苦みのアクセントが心地よく、ワインではなくビールだと思わせてくれる。加えてオーク樽の風味。★液体に浮かんでいる杏がピリリとした辛みのアクセントになっているんだと気づいた★これを意識して飲むととてもおいしい。しおもしろい。

The Swallow

ややピリピリとした辛さを感じる。嫌な感じはない。？ポカリっぽさを感じた？

Aftertaste

Kiwi-like acidity and a peppery apricot impression linger for a long time. The acidity is so good it makes your mouth water.

Overall Impression

An acidity-driven beer where you can clearly taste apricot, grape, and oak barrel. Very romantic. Maintains a fruity, white wine-like quality while retaining unmistakable beer characteristics.

Dregs

Concentrated. Strong apricot flavor. Caramel notes too. I’d love to pour this over pudding or ice cream. Aroma of white grapes. However, the heat hitting the throat on the swallow is too intense. It’s delicious, but better to separate the dregs from the main body.
