Monkish Brewing, often called the ‘legendary West Coast brewery’ with a passionate fanbase

Monkish craft beers are known for being hard to find, as they brew in small quantities and primarily serve only at their taproom.

The quality and flavor of Monkish’s IPAs are so outstanding that some call them ‘the best in the world.’

Their beers, as if blessed by the divine, have captivated beer fans not just in America but around the world.

Founder Henry’s journey into homebrewing began with his discovery of Belgian beers.

While attending a Christian university to become a pastor, the complex flavors produced by Belgian yeast fascinated him. Moreover, as a theology student, the historical relationship between monks and beer in Belgium deeply intrigued him.

While teaching at a prestigious Christian university, he became deeply immersed in homebrewing.

He eventually raised the capital and opened Monkish in 2012.

Henry has a deep commitment to Belgian-style beers and sour beers.

Henry describes himself as a ‘neurotic, indecisive perfectionist’ and refuses to sell any craft beer whose flavor doesn’t meet his satisfaction.

The immense popularity as a beer worth lining up for surely comes from the passion poured into every brew.

Beer Style Guidelines

99. American-Style India Pale Ale

American IPA ranges in color from pale to copper. Chill haze is acceptable. Hop haze may also be present regardless of temperature. Fruity esters range widely from low to high. Hop aroma and flavor are high to very high, with floral, fruity (berry, tropical fruit, stone fruit like plum and apricot, blackcurrant、etc.), sulfur or diesel-oil-like aroma, onion/garlic aroma, citrus aroma, or pine resin aroma. Hop bitterness is medium-high to very high. Malt aroma and flavor are medium-low to medium. Diacetyl, if perceived, is acceptable at very low levels. Body is medium-light to medium. 55-B. California Common Beer

　California Common Beer ranges in color from light amber to medium amber. The appearance is clear, and chill haze is not acceptable. Fruity esters are low to medium-low. Toast or caramel malt character is mediam levels. Hop aroma and flavor are low to medium-low. Hop bitterness is medium to medium-high. California Common Beer is brewed using lager yeast but fermented at ale temperatures. Diacetyl should not be present. Body is medium.

• Final Gravity (Plato)：1.010-1.018 (2.6-4.6)
• ABV ：4.5-5.7% ABV

103．Juicy or Hazy Imperial India Pale Ale

　Juicy or Hazy Imperial IPA ranges in color from straw to light amber. Haziness is characteristic of this style, with turbidity from light to significantly cloudy levels. Starch, yeast, hops, protein, andの他が、多様な濁りの原因となっている。フルーティーなエステルはミディアム・ハイからハイ・レベルで、モルトの甘味を爽やかにし、ホップ・アロマを強調する役割を果たしている。ホップのアロマとフレーバーはハイから非常にハイ・レベルで、とりわけフルーティー、トロピカル、ジューシーなキャラクターを伴う。ホップの苦味はローからミディアム・レベル。苦味の印象はソフトで全体のバランスときれいに調和していること。また、実際に感じる苦味のレベルはIBUの数値よりもかなり低い。モルトのアロマとフレーバーはローからハイ・レベルまでと幅が広い。濁りを促進するために、オート麦、小麦、そのほかの副原料を加えることができる。ビアスタイル名にある「ジューシー」という言葉は、大量のホップをドライホッピングすることでビールに付与される味とAromaのキャラクターを言い表しており、ジュース（果汁）のキャラクターは必要ない。そのほかにホップ由来のキャラクターとして、シトラス（柑橘）、パイン、スパイス、フローラル、ブラックカラント、その他のAromaが感じられてもよい。ダイアセチルがあってはならない。ボディはミディアムからフルの範囲。シルキーな触感または豊満なマウスフィールがフレーバーの全体に深みをつけるのに寄与している。クリスタルモルトよりダークなモルト、通常IPAには使用しないエール酵母、フルーツやスパイスその他の香味原料を使用してつくったバージョンは、エマージング・インディア・ペールエールに該当する。

WHAT IS A COLD IPA?

We made the first Cold IPA called “Relapse IPA” in October 2018 in honor of Relapse Records. We were trying to make something with the elements of West-Coast IPA but taken to the extreme. We wanted something drier with excessive hoppiness but a cleaner finish. Frankly, we tried to make a style of beer that could showcase American hops in a new way. Cold IPA hits with a strong punch of aromatic hop intensity and high bitterness but finishes crisp and clean leaving the drinker craving another sip. It’s Wester than West Coast.

We created our first Cold IPA in October 2018 called ‘Relapse IPA’ in tribute to Relapse Records. We were trying to make something with West Coast IPA elements, but taken to the extreme. Wewere seeking a dry yet clean finish with excessive hoppiness. Frankly, we were trying to create a beer style that could showcase American hops in a new way. Cold IPA delivers a strong punch of aromatic hop intensity and high bitterness, but the aftertaste is refreshing and clean, making you want another sip. More West than West Coast.

Appearance (SRM)

3-4. Slight haze.

Aroma

Aroma (Orthonasal)

Pine. Kiwi. Esters. Incredibly thick. Doesn’t feel thin at all. Almost like white grape. The ester intensity isn’t cloying at all, creating an aroma density similar to the body.

Flavor (Retronasal)

Grape skin. Apple juice. Green apple. Esters. Despite the strong esters, they harmonize beautifully with the hop aroma, so you don’t feel the intensity. You can sense the high level of brewing skill.

Taste

Mouthfeel

Beer-like. Light.

Body and Texture

Medium body but feels very light. Satisfying yet light — the perfect balance. Light in the mouth, yet with real substance.

The Swallow

Not much dank character. Dry. Leaves absolutely nothing behind. Clean.

Aftertaste

Dry and empty. Yet nothing is missing. Feels great. Like standing in a meadow. Refreshing. Makes you want a Helles.

Dregs

Same as the main pour. Slightly piney.

Tasting Notes

No Cold IPA category exists so left unscored. I’d give it full marks.

Overall Impression

I think this is what West Coast IPA / Cold IPA has been aiming for. Incredible. There’s a greatness you can only understand by drinking it. Dry yet full — no lack of anything. It achieves both.
