What is Garden Path Fermentation?
Garden Path Fermentation is a brewery based in Burlington, WA that specializes in natural/mixed fermentation. While many spontaneous fermentation breweries don’t have taprooms, this one has a full taproom where you can experience the brewer’s craft firsthand while enjoying their beers — a rare and valuable experience.
The PNW spontaneous fermentation scene features legendary breweries such as De Garde Brewing in Oregon, Floodland Brewing and Fair Isle Brewing in Seattle, and formerly Upright Brewing (unfortunately set to close). Garden Path Fermentation stands proudly in this lineage.

Burlington is a fair distance from both Seattle and Bellingham, making the visit a bit challenging. However, for fans of spontaneous fermentation beer, it’s absolutely worth the effort! We recommend combining it with a day trip visiting breweries in Seattle or Bellingham.
Taproom & Atmosphere
The taproom has a calm atmosphere befitting a spontaneous fermentation specialist. The interior features simple, natural materials that embody the world of fermentation. The tap list constantly changes with seasons and fermentation batches, so every visit brings new discoveries.
Beers I Tried: Funky Wild Ales
The most memorable beer was a low-ABV wild ale. Despite the low alcohol content, the fermentation-derived aromas were incredibly powerful, layered beautifully with a toasty malt character. The balance was stunning. Low ABV doesn’t mean low flavor here — quite the opposite, as it lets you focus purely on the liquid’s complexity.
Wild Ale Flavor Profile (Funky Low-ABV)

Mixed fermentation is a brewing method that uses not only pure-culture yeast like in lagers and ales, but also wild yeast (Brettanomyces, etc.) and lactic acid bacteria. Extended aging develops complex fermentation aromas and acidity. It’s in the same tradition as Belgian Lambic and Gueuze — a truly authentic style!

“Funky” might sound a bit intimidating, but once you try it, it’s not off-putting at all — it actually becomes addictive! The fact that this much aroma comes from a low-ABV beer is amazing!
