Himitsu Beer is a craft beer brewery in Ise, Mie Prefecture, 2022年に創業されました。地元出身の藪木啓太氏と佐々木基岐氏によって設立され、祖父母の代から受け継いだ農業用の納屋をリノベーションしてブルワリーとして使用しています。「ひみつビール」という名前には、「あなたの大切な人にだけ教えてほしい。」という願いが込められています。

ビールの醸造には、アメリカ産の麦芽や伊勢の水を使用しており、farmhouse ale styles中心とした多様なビールを提供しています。主なビールには、HOMEY SAISON、FULL MOON、SPARKLE、RICE HACK、EUPHORIA、LUSHamong others.

Characteristics

お米でビールって造れるの？
ビールは漢字で書くと麦酒と書きます。まぎれもなく麦からできたお酒がビールですが、お米を原料に加えることも伝統的にされてきました。その目的はボディを軽くして飲み口を軽やかにすることでしょうか。有名なドライビールにもお米が使われていますよね。
Rice was an ingredient they had always wanted to use but never had the chance, so this brew was the fulfillment of a long-held dream.RICE HACKのアイデアはコロナによる不安定な社会情勢から、海外から買い付けている麦芽がもしかすると急に入ってこなくなることがあるのでは？と思ったことがきっかけでした。僕たちは麦も作っていますが、本業は米農家。お米だったら日本のほとんどの農家が栽培のプロフェッショナルなのでお米でビールが造れたら安定的に地元の原料の供給を受けることができるのです。まずは自分たちと家族で毎年作っているコシヒカリをたっぷり使ってチャレンジしました。

This beer appears much clearer and brighter than typical beers.
The mouthfeel is very light and crispy. Notes of pineapple and pear with raspberry and berry nuances. Clean mouthfeel matching its beautiful clear color, with riceを沢山使っているからこそだと思います。みずみずしい飲み口は、こってり料理との相性も良さそうです。とてもリフレッシングな一杯です。
RICE HACKは今後RICE HACK2.0や3.0and they plan to keep improving with future versions.

Beer Review

Appearance

Ultra clear.

Aroma

Orthonasal Aroma

Mosaic-like? Yet barely any chicle or flavor-faded gum impression. Plus an exquisite fruitiness that seems to blend with rice aroma. It has notes you might find in sake as well.のも混じってると思う。

Retronasal Flavor

程よい酸味。Not cloying八朔。やや硬い熟れきってないピーチのような香り。堅いベリー系のようなニュアンスもなくはない。美しい。

Taste

Mouthfeel

ビールらしい。

Body and Texture

Fizzy carbonation. Natural hop-derived acidity that blends in. Not cloying. Hops take center stage with malt ultra-restrained, and rice is prominent with sake-like nuances.(Those who normally drink happoshu (low-malt beer) might find it similar?)Incredibly light and beautiful.COLD IPAYeast temperature is important too, but that is the means. The goal is to minimize non-hop elements(malt and fermentation aromas)so they do not stand out. The non-hop elements here are very restrained, making the hops shine through delightfully. Yet the hops are neither too strong nor too subtle.れでも主張しすぎない八朔感と熟れていない堅い桃のようなニュアンスにとても心躍った。

The Swallow

Mint and peach-like nuances spread in the mouth, then vanish with a sake-like dryness that has a slight grainy texture.

Aftertaste

Rice finish? Not cloying. Falls down the throat like water, leaving fruity hop aroma in the mouth. Non-astringent hassaku (citrus) and orange-like freshness lingers. The balance of hassaku-like citrus and dryness is pleasant.

Overall Impression

Despite not being overbearing, the fact that hops remain the star is excellent. I love the balance of not-too-intense hops and dryness. I could drink this forever.

Dregs

やや辛さ、ざらつきを感じる。分けた方が良い。ピリリとくるのと酸味が目立つ。ただ、魚料理にはとても合うと思う。飲み込んだ瞬間も喉にピリリとくる。本体の美しさを損なう。分けた方が良い。
