2nd Story Ale Works is a brewery located at 13-1 Minamizone, Hatamachi, Tokushima City, Tokushima Prefecture, specializing in Farmhouse Ales within Japan’s craft beer scene. This time, I purchased two bottles of their “farmhouse 2021” from the same lot and compared the taste differences after storing them for one year under different conditions (room temperature vs. refrigerator). The results of how Brett yeast activity changes with temperature made for a fascinating experiment.

Brett yeast (Brettanomyces) is different from regular Saccharomyces yeast — it continues to slowly work even inside the bottle! At higher temperatures, it becomes more active and produces those distinctive funky aromas!

So basically, the storage temperature changes the flavor. The same beer becoming something completely different is such a fascinating experiment.

Wait, you have to wait a whole year? I’d want to drink it right away…

Clear and transparent. Maintained the typical clear appearance of a Farmhouse Ale.

Developed haze and shifted to a brownish hue. Head retention improved dramatically, with a creamy foam that persisted for a long time. These changes are likely due to ongoing Brett yeast activity.

When Brett yeast becomes active at room temperature, it produces compounds like 4-ethylphenol and 4-ethylguaiacol, creating the distinctive “horse blanket” aroma often associated with barnyards! That’s the quintessential charm of Farmhouse Ales!

That’s a bit too technical, Hop-kun (laughs). Basically, at room temperature, it develops a “wild” and “distinctive” aroma, right?

Mouthfeel: Carbonation hits the tongue first, and a yeast character with faded funkiness spreads gently in the mouth.
Body & Texture: Gentle bitterness that gradually builds on the tongue. As the temperature rose, I detected a slight DMS (dimethyl sulfide, a corn-like aroma), but it was negligible when drinking normally. The drinkability that 2nd SAW is known for really showed through.
Aftertaste: Peach-like aromas linger in the mouth with absolutely no cloying sweetness. A very dry and clean finish.

Mouthfeel: Soft, fluffy carbonation bubbles gently hit the palate. The carbonation felt milder than the refrigerated version.
Body & Texture:*Brett yeast takes center stage*Lively yeast bursts on the tongue while maintaining spicy nuances.*A party of wild character*Even as someone who used to dislike phenolics, I was moved by how well the wild character worked here. While maintaining 2nd SAW’s trademark drinkability, the yeast character bursts through beautifully — a truly enjoyable drinking experience.
Aftertaste: Yeast spiciness with hints of peach and ripe melon-like nuances lingered.

“A party of wild character” — what a fun expression! But phenolics sound medicinal — isn’t that scary?

In this case, phenolics are just one element that creates the beer’s overall complexity. On their own they can taste medicinal, but combined with other elements, they create a deeper, richer flavor.

The refrigerated version was incredibly dry and best enjoyed by chugging it while cold. Meanwhile, the room temperature version was packed with yeast character, with funkiness riding on the carbonation into a *supremely funky*full-bodied drinking experience. Personally, I prefer the wild character of the room-temperature version, but this is definitely a matter of taste.
One note: in both versions, the alcohol becomes more noticeable once the carbonation fades, so I recommend finishing the beer promptly after opening.
