About This Craft Beer

Beer Characteristics

[From the Brewery]

A Fruit IPA using “Yamasachi,” a wine grape variety developed in Tokachi and cultivated in Tsurui Village (Hokkaido).
Grown in cold climates, Yamasachi grapes offer gentle fruitiness along with wild acidity and tannic character.
By combining these grapes with a slightly high-ABV IPA, the result is a deeply flavored beer where you can taste subtle grape-derived acidity and tannin on the palate.
This is the first fruit beer using fruit from Tsurui Village. Please savor the taste of Hokkaido’s Tsurui Village.

Craft Beer Review

Appearance

Yellow. Like a slightly reddish peach.

Aroma

Aroma (Orthonasal)

Green apple-like yet ripe peach, with a slight cucumber impression. Combined with American-Belgian yeast character and hop-driven passion fruit and bubblegum sweetness. Delicious.

Flavor (Retronasal)

Strong chicle notes with grape-like acidity. Inside, malt sweetness and chicle combine into citrus. Extremely fleeting, with strong dryness emerging from here.

Mouthfeel

Despite being dry, the mouthfeel is Calpis-like. Some lactic acid character detected. Quite gentle.

Body and Texture

When it hits the tongue, acidity and unripe peach impressions rush through. Complex acidity within. A touch of wildness.

The Swallow

A touch of acidity and fruitiness stimulates the throat before dropping down dry. Light and smooth. At the moment of swallowing, you feel a Mitsuya Cider-like sweetness reminiscent of American-Belgian beers.

Aftertaste

Hops and grapefruit peel-like acidity linger slightly with a touch of fruitiness.

Dregs

Gentle even after swallowing. No honey-like impression, just a pleasantly heightened acidity.

Overall Impression

The kind you want to chug while cold. Might be better approached as a saison than an IPA. However, the hop intensity is definitely IPA-level. Belgian yeast, perhaps? The cider-like sweetness and dryness at the moment of swallowing evokes saison. Seems very food-friendly. That was my review of Brasserie Knot YAMASACHI!
