DDH stands for “Double Dry Hopped.” It means they use twice the amount of hops during the dry hopping process, resulting in more intense aromas and flavors. It significantly enhances the hop character of the beer.
For Beer Beginners: What is Dry Hopping?
Dry hopping is a brewing technique where hops are added to beer after fermentation. Since the hops aren’t boiled at this stage, they impart fresh, vibrant aromas without adding much bitterness. This method is particularly common in IPAs and pale ales to create those signature hoppy aromas.

Beer 101: What is an Altbier?
Altbier is a traditional beer style originating from Düsseldorf, Germany. The name “alt” means “old” in German, referring to the traditional top-fermentation method. Typically, these beers have a copper-amber color with a well-balanced malt sweetness and hop bitterness, often accompanied by subtle caramel notes.
This was the first beer I tried during my visit. The balance between malt sweetness and hop integration was exceptional, with a pleasant lingering hop bitterness characteristic of German-style lagers. It’s a superb example of a traditional German style beer with a modern interpretation.

Altbier uses a different fermentation method than the lagers commonly consumed in the US. It’s top-fermented and has a richer malt flavor profile. Compared to mainstream American beers, it has more depth and character.

Beer 101: What is a Hazy IPA?
Hazy IPA (also known as “New England IPA”) is a style characterized by its cloudy appearance. Using oats or wheat, specialized yeasts, and extensive dry hopping creates a juicy, citrusy flavor profile with tropical fruit notes. These IPAs typically have less bitterness than West Coast IPAs, making them more approachable for many beer drinkers.
Next, I tried one of Here Today’s flagship beers, MEGAOBJECT. This double dry-hopped Triple IPA is remarkably drinkable despite its high alcohol content.

The high ABV is definitely something to be mindful of. First-timers might want to start with a smaller pour or try it as part of a flight. High-alcohol beers are best enjoyed slowly and in moderation.
In my personal opinion, this was an exceptional beer. Rather than leaning fully into either the lighter Northwest-style hazy or the heavier New York-style, it strikes a perfect balance between both worlds. Its fruitiness is particularly outstanding, making it one of the most memorable hazy IPAs I’ve tried in Seattle. The initial sip delivers strong melon notes from Citra hops alongside sweet alcohol warmth. The mouthfeel is gentle with oats providing smoothness, while a subtle peppery character develops as you savor it.
As the beer warms slightly, the balance between fruit character and alcohol coolness improves, revealing more complex flavors. Compared to other Seattle breweries I visited, Here Today’s approach to hazy IPAs was particularly impressive. Their technique for extracting hop aromas and expressing fruitiness is exceptional.

Taproom Experience: Atmosphere and How to Order at Here Today Brewery + Kitchen
Here Today’s taproom features a distinctive retro-futuristic design with pastel colors and neon lights that evoke 1990s food courts and 1970s skating rinks. Saturdays often feature events and can get crowded, but weekday evenings are typically more relaxed, allowing you to enjoy your beer at a leisurely pace.
The outdoor terrace is particularly pleasant and feels spacious by Japanese standards, though it’s considered somewhat compact by American standards. Inside, there are comfortable café-style sofa seats where you can relax in a bright atmosphere with natural light streaming in. With Wi-Fi available, you can even bring your laptop and enjoy a beer while working.

Not at all! Simply saying “Can I have a pint of MEGAOBJECT, please?” works perfectly. You can also take a photo of the tap list and point to what you want. Or try asking “What do you recommend?” and the staff will gladly suggest options.
One of the attractions is being able to see the brewing equipment in the facility, giving you a glimpse into the beer-making process. The staff is extremely friendly and happy to answer questions about their beers. The overall atmosphere is lively but not overwhelming, making it easy to place orders.
Guide to Ordering at Here Today Brewery + Kitchen (For International Visitors)
Beer names can be unique, so taking a photo of the tap list and pointing to your selection is a safe approach.

Order by saying “Can I have a pint of [beer name]?”
Step 2:
When asked “Tab, Open? Close?” choose whether to pay as you go (Close) or run a tab (Open)

Show ID (passport or driver’s license) if asked for age verification
