Cerebral Brewing Denver: Top-Rated Hazy IPA Destination

On October 31, 2025, during my Denver stay for GABF (Great American Beer Festival) week, I visited Cerebral Brewing (Congress Park location) as my 13th brewery. Known for Denver’s highest Untappd rating and a brewing philosophy that fuses scientific approach with artistic sense, the smoothness and clean finish of their “Modern Hazy” still lingers in my memory 🍺

What is Cerebral Brewing?

Cerebral Brewing is a brewery founded in November 2015 near Congress Park along Colfax Avenue in Denver. Co-founders Sean Buchan (former physical therapist turned brewer) and Dan McGuire (CFO/financial strategy) embrace “Scientific approach to beer” as their core philosophy.

From day one they established a QA/QC lab, and their commitment to quality control investment is highly regarded in the industry. In 2022 they added an 18,000 sq ft production facility in Aurora, and in 2024 opened the Aurora Arts taproom. They’re also expanding with a new taproom in West Highland.

Walking in, the first thing that catches your eye are the stainless steel brewing tanks visible through glass. You can enjoy beer while feeling the brewing process in this modern brewery-style space.

Weekends are lively with casual locals and dog-owning families, with food trucks outside. The open, relaxed Denver vibe is fantastic. Staff are friendly, making it approachable even for craft beer beginners.

I ordered a Hazy IPA style (likely Modern Hazy). Their flagship Rare Trait (Hazy IPA, 6.4% ABV, 60 IBU) is what the brewery calls their “crown jewel.” Using Citra, El Dorado, and Mosaic hops, it boasts an Untappd rating of 4.03/5 (19,588+ check-ins).
