This is our first collaboration in 3 years with “Pigalle,” a very small pub/bottle shop in Sankenjaya, Tokyo. The style is Helles, a lager beer commonly enjoyed in southern Germany.
We learned from the two owners of Pigalle that “Stammtisch” is German for “table for regular customers.” German pubs always have tables reserved for regular customers, and we interpret this naming as hoping that Pigalle’s regular customers would enjoy this Helles in the same way. We brewed this beer together aiming for a Helles that you can enjoy anytime without getting tired of it.
This batch features a slightly improved recipe from the previous one, resulting in a finish where you can taste more malt richness. We’d be happy if you could drink it down while imagining the scenery of Franconia, Germany.

【Beginner’s Guide: What is Helles?】

Helles is a pale lager beer originating from Bavaria in southern Germany! “Helles” means “bright,” and it has less bitterness than Pilsner with malt sweetness being its characteristic! The alcohol content is usually 4.7-5.4%, IBU is 16-22, making it mild and beloved as Germany’s everyday beer! It’s made with low-temperature fermentation and aging, offering a clean and well-balanced taste!

Slightly hazy brown color. Haze from malt proteins. Natural haziness characteristic of unfiltered beer, proof of living beer.

Toasted malt aroma, cookie-like, straw-like scent. Gently followed by noble hops asserting themselves. Fresh like wind blowing across a meadow.
🌸 Flavor (Retronasal)
Sweet chicle-like nuances, refreshingly reaching the nose. Impressions of flower nectar and lemon. Lemon drop, throat lozenge-like freshness. Not quite like hassaku orange. Orange-like sweetness is certainly present.

💧 Mouthfeel
Carbonation is quite restrained, entering the mouth naturally. Gentle and just right.
🍯 Body & Texture
Perfect balance between malt sweetness and hop bitterness. Sweetness and bitterness come in good balance. Some xylitol gum-like nuances. Mint. Hops aren’t too strong, and carbonation isn’t too strong either, so you can fully enjoy the malt.

Exactly! When carbonation is strong, hops stand out too much, so when you want to highlight malt, you should be especially mindful of carbonation strength. This design philosophy matches the concept of aiming for a Helles that “you can enjoy anytime without getting tired of it.”

Goes down the throat pleasantly. Sensation of clean liquid entering the body.

Slightly smoky, woody malt toastiness. Delicious.

Darker color but not much different from the main body. Strong mint sensation, reminiscent of toothpaste.
Overall Impression
A very delicious and well-balanced Helles. This might be my best Helles of the year. The malt sweetness and hop bitterness harmonize exquisitely, achieving the concept of “you can enjoy anytime without getting tired of it.” The improvement from the previous batch, allowing you to taste more malt richness, is also commendable.

By the way, Stammtisch literally means “regulars' table” in German! It’s such a fitting name for this collaboration beer, don’t you think?
